Wall Oven, Steam Oven and Speed Oven Repair

Single and double wall ovens, steam and combi-steam ovens, and speed ovens from Wolf, Thermador, Miele, Viking, Monogram, Dacor, Gaggenau and JennAir. Nearly every repair is an element, the temperature sensor, a fan, the door latch, the water system or a control board, and most are done with the oven in the wall or slid partway out.

$79 service call, applied to the repair. Monday to Saturday, 8 AM to 7 PM.

In short: built-in ovens from different brands are built much alike: a hidden bake element, a broil element, a convection fan with its own element, a temperature sensor, a motorized latch, a cooling fan and a control. Which modes still heat, whether a code shows, and whether it started during self-clean tell us most of the diagnosis. Steam ovens add a water system; speed ovens add a microwave.

The ovens we repair

  • Single and double wall ovens. Wolf E Series, M Series and the earlier framed and unframed models (SO30F, SO30U, DO30F, DO30U),Thermador Masterpiece, Professional and CM, Viking Professional and Designer, Monogram ZET, Dacor Renaissance, Discovery, Distinctive and Classic, and wall ovens from Miele, JennAir and Gaggenau.
  • Steam and combi-steam ovens. Wolf convection steam ovens, Miele, Thermador and Gaggenau steam ovens, and the steam cavities built into some pro ranges (see range repair).
  • Speed and combination ovens. A convection oven with a microwave inside, alone or stacked with a wall oven, and older combinations such as Thermador's CM double ovens.
  • Warming drawers. Usually the element, the thermostat or a tripped high limit; we find why a limit tripped before resetting it.

The rating plate with the model and serial is on the oven frame, usually visible with the door open or under the control panel. A photo of it lets us check parts before the visit.

Before you call: settings that look like faults

  • Will not heat now: a delayed start, the panel lock or Sabbath mode is on.
  • Broil or self-clean refuses to start: on many ovens, Dacor among them, the meat probe is still plugged in. On some double ovens, one cavity will not self-clean while the other is in use.
  • Turned itself off: many electronic ovens shut down after about 12 hours of continuous use.
  • Fan runs after the oven is off: the cooling fan clearing heat from the electronics. It stops on its own.
  • Locked after self-clean: the latch holds until the cavity cools; clean plus cool-down takes about four hours on many ovens.

If none fit, switch the breaker off for a minute and back on. If the problem returns, it is a repair.

What fails, most common first

One mode or the whole oven will not heat

What it usually is: a burned-out element, most often the hidden bake element, often during or just after a self-clean. The oven may still warm slowly from the other elements, which hides it for a while.

What you can check: try bake, broil and convection one at a time, and time an empty preheat to 350°F.

What we do: measure each element and the thermal cutout. Brand detail: Wolf, Thermador and Viking oven not heating.

Temperature off

What it usually is: a drifting sensor, a loose connector behind the cavity wall, or an old calibration offset; Wolf and Dacor ovens allow up to 35 degrees either way. Sometimes it is the thermostat, as in our job Viking Oven Not Holding Temperature? Thermostat Fix (May 2024, Orange County).

What you can check: an oven thermometer on a middle rack, read several times over 20 minutes after preheat. Elements cycle, so only the average counts.

What we do: compare the control's reading with a meter, check the offset, replace what is out of range. See Wolf oven temperature off.

Shuts off mid-cook, or a fan or overheat code

What it usually is: a cooling fan that slowed or stopped, or blocked airflow, so the control cuts the heat. Thermador's CM ovens check that the fans are moving air and cancel the mode when they are not; Monogram's 2006 ZET ovens use a thermal switch that brings up F9. Broiling with the door open does the same on many ovens, Dacor's Renaissance among them.

What you can check: broil with the door closed unless your guide says otherwise, and keep the trim vents clear.

What we do: test the fan, its switch and the cutouts. A stopped fan is replaced before it cooks the board.

Door locked after self-clean, or will not lock

What it usually is: the latch motor or a switch that reports its position. If the control cannot confirm the latch, it refuses to clean or to let go. On doubles the code usually names the cavity.

What you can check: let it cool fully, then one breaker restart. Never pry the door.

What we do: test motor and switches and replace the assembly if needed. See Wolf oven door locked.

Keys ignored, blank display or a control code

What it usually is: a worn keypad or touch panel, a stuck key, a loose ribbon cable, or a control or relay board, sometimes after a surge. A relay stuck closed is the dangerous version: the oven heats when it should not.

What we do: test keys against the board, read stored codes, and confirm a board still exists for an older oven before you decide.

Steam oven: weak steam, water messages, drain faults

What it usually is: scale in the generator, pump or hoses, fouled level sensing, or a blocked drain. Steam cavities in some pro ranges, Dacor's among them, show a drain code when water stays in the system after draining.

What you can check: descale when asked; the steam oven descaling guide covers what to try first for each message.

What we do: clear the scale the program could not reach, check the pump, generator and water sensing one at a time, and replace what failed.

Speed oven: one side works, the other does not

What it usually is: the two functions share the cavity, the door, the control and the cooling fan, but heat with separate parts. Bakes but will not microwave: magnetron, high voltage or a door switch. Microwaves but will not brown: element, fan or cutout.

What we do: discharge the high-voltage side first, test each part, and run a leakage test after door or magnetron work. See microwave and speed oven repair.

How a few ovens report faults

Some controls store most codes for the technician and show the owner only a few. Meanings vary by model and era.

How a visit works in a finished kitchen

  1. Call or book online. Brand, model from the plate, which modes work, any code. You talk to a technician.
  2. Diagnosis. Floor and cabinet faces covered, readings taken. The $79 service call covers it.
  3. Written price. Before any work starts, and it does not change. Brand parts usually take a few business days; we tell you the lead time first.
  4. Repair in place. Sensors, gaskets, the convection fan and on many ovens the elements come out through the cavity. Cooling fans, boards and latches are reached through the control area or with the oven slid forward onto padding, breaker off. Some ovens, Monogram's 2006 ZET among them, come fully out for the hidden bake element, and we tell you before that: a wall oven is screwed in through the trim, wired to its own 240-volt circuit and needs two people.
  5. Tested and covered. Every mode run before we leave. A return for the same fault within 90 days has no service-call fee.

Stay safe. An oven that heats while off has a stuck relay: switch it off at the breaker and call. Do not slide a wall oven out yourself; it can tip once it clears the opening. On a gas oven, if you smell gas, leave the house and call the gas company or 911 from outside.

Wall, steam and speed oven repair: questions

Which wall oven brands do you repair?

Wolf, Thermador, Miele, Viking, Monogram, Dacor, Gaggenau, JennAir and the other built-in brands. We are independent, not affiliated with any of them.

Why does my wall oven turn off by itself mid-cook?

After about 12 hours, that is the automatic shutoff. Sooner, it is usually a stopped cooling fan, blocked airflow or broiling with the door open, all of which overheat the electronics.

Is self-clean bad for a wall oven?

It is the hardest thing the oven does, and many elements and latches fail during or just after a clean. Take the racks out, stay nearby, and run it several days before you need the oven for guests, not the day before.

How can I tell whether my oven temperature is really off?

Average several oven thermometer readings over 20 minutes after preheat. Swings around the set point are normal; an average more than about 25 degrees off is worth a visit.

Will the oven have to come out of the wall?

Often not completely, though on some ovens the hidden bake element means taking it out. If it must come out, we say so first and protect the cabinetry and floor.

Is it worth repairing a 15-year-old wall oven?

Usually, if it is sound and the part is still made. A replacement must fit the same cutout, trim and circuit, which narrows the choice and adds installation cost.

Can you tell what is wrong from the error code alone?

It narrows it down. The code names the circuit the control did not like, so we confirm the failed part with a meter before ordering. Send the code with the full model number.
